Kale

David L Hartshorne Jr asked: “For the first time I cooked KALE last night. I would love to learn more ways of cooking it if anyone has any other suggestion let me know.”

Some comments we received:

Comment #1:  Make Kolkannon. Potatoes and Kale with a broth. Add onions or other veggies for flavor. Cook like mash.

Comment #2:  I like adding minced garlic and olive oil to it and sauteeing it. It needs to be done on very low heat and it takes a while but its delicious.

Comment #3:  Creamed Kale. Several bunches of kale, stalks torn out if the leaves, sweated in a pot, add butter, 1/2&1/2 or cream, salt, pepper, and nutmeg to taste, reduce slightly to thicken. Serve with a hearty bread like rye, pumpernickel, or sourdough (I prefer a dark, fragrant bread like whole grain, multi-seed dark rye).

Comment #4:  Kale chips, YES! just chop the greens into manageable pieces, toss with some olive oil, salt, and pepper and spread on a cookie sheet. Bake until crispy.
